Fushimi Pepper
Fushimi is a traditional Japanese sweet pepper from the Kyoto region. The pods are long and skinny, usually around 5 to 6 inches, with thin walls that make them cook very quickly.
Heat is very low, usually somewhere between 0 and 2,500 SHU. Most will be mild. The flavor is sweet and a little fruity, even when the peppers are still green.
In the Kitchen
Fushimi is especially good for frying, blistering, and stir-fries. The thin walls soften fast, so you do not have to cook them forever to get a good texture. They are also good fresh, especially if you like milder peppers with a little more flavor than a standard bell.
The pods ripen from green to red, though they are commonly used green. Plants are productive and tend to get going fairly early in the season.
