Pimento Pepper Seeds

Pimento is a classic sweet pepper with short, rounded, heart-shaped fruit and thick flesh. It is an old heirloom Capsicum annuum.

Heat is extremely low, usually close to nonexistent. The flavor is sweet, mild, and richer than a standard green bell pepper once the fruit fully ripens. If you like sweet peppers such as Corno di Toro Rosso or Golden Cal, Pimento gives you another option with a completely different shape and texture.

Flavor and Uses

We probably have all seen pimentos used as the little red pieces stuffed into green olives.  There are plenty of other good uses for them. The peppers have thick walls/flesh, which works great for roasting, stuffing, chopping into salads, or pickling.

Fresh pimentos also pair well with tomatoes, especially in sauces, relishes, and fresh summer dishes. If you are already growing cucumbers or tomatoes, this is an easy sweet pepper to work into the same meals.

Growing Pimento Peppers

Pimento plants grow much like other sweet Capsicum annuum varieties. Start your pimento pepper seeds in quality seed starting mix and place in a warm (75-85F) location and give the seedlings plenty of light once they germinate.  Gradually introduce full strength sunlight to plants to harden them to the rigors of outdoor life. Plants can be put into the ground as soon as the threat of frost has passed.

In practice, plants will grow much faster if final transplant is done with nighttime temperatures staying above 55F. The love full sun and well-drained soil.

The fruit is fairly heavy for its size, so some staking may be required. Let the peppers stay on the plant until they reach their full red color if you want the sweetest flavor.

Pimento pepper seeds are a good choice for gardeners who do not want heat.
