Aleppo Pepper Seeds
Aleppo pepper is a traditional Syrian chile with moderate heat and a rich, slightly fruity flavor. The pods ripen red and are commonly dried and crushed into flakes. Expect heat somewhere around 10,000 SHU, roughly a couple times hotter than a typical jalapeno.
Flavor and Uses
Aleppo pepper has a warm, slightly smoky flavor with a little sweetness behind the heat. It is hot enough to notice, but not so hot that it takes over the food.
Dry and crush the ripe peppers for homemade Aleppo-style flakes. They are excellent on meats, roasted vegetables, pizza, pasta, eggs, hummus, and plenty of other dishes. You can also use the peppers fresh in sauces or cooking.
A Pepper With Some History
Like all chile peppers, Aleppo ultimately traces back to the Americas. Peppers spread through Europe, Africa, Asia, and the Middle East after the Columbian Exchange, eventually becoming part of local cuisines and breeding traditions.
Aleppo developed into an important pepper in Syrian and broader Middle Eastern cooking. The traditional dried flakes became especially valued for their balance of flavor and moderate heat.
Growing Aleppo Peppers
Start Aleppo pepper seeds indoors in a quality seed starting mix. They’ll need warmth (75-90F is a good sweet spot) and bright lights (once seedlings pop through the soil) . Transplant outside once the risk of frost has passed, or if you can, once the night temp stays at or above the mid 50s! Give the plants full sun, regular water, and good drainage.
The peppers begin green and ripen red. Let them fully color if your goal is drying and making flakes.
