Balik Pepper
The Balık pepper, whose name means “fish” in Turkish, is a distinctive heirloom variety from the Balkans and northwest Turkey. Its slender, two-lobed fruits resemble a fish in shape, measuring about 1 inch wide and 3 inches long. With a crisp texture and milder heat than most jalapeños, it’s ideal for pickling and stir-frying. For a bit of an appetizer twist, try stuffing with cheese or grains, then roasting or grilling. Â
