Aji Pineapple

Aji Pineapple is a Capsicum baccatum with bright yellow fruit and a tart, citrusy flavor. The pineapple comparison is fair, though I would not expect it to taste like a piece of actual pineapple.

Flavor and Uses

Heat is usually somewhere around 20,000 to 30,000 SHU. That puts it in the same general range as a Serrano, but the flavor is very different.

These work really well in hot sauce, salsa, fermented sauces, and anything where a citrusy pepper makes sense. A spicy pineapple salsa is an obvious one.

Aji Pineapple is also very similar to Lemon Drop. Honestly, they are close enough that growing both side by side is a good way to figure out which one you actually prefer.

We use both in our family citrus pepper jelly. Easy to make, tastes great, and it has become a pretty good Christmas gift around here.

Growing

Plants are productive, as is pretty typical with baccatum peppers. The pods are usually around 2 to 3 inches long and ripen from dark green to bright yellow.

If you have grown Aji Amarillo or Sugar Rush Peach, growing this one will feel pretty familiar.
